I have travelled reasonably extensively for both business and pleasure across a wide range of different class hotels, but mainly (and especially over recent years) 4* and 5*. I would describe myself as a discerning traveller, and enjoy fine dining. Over the years, we have been privileged in tasting some of the finest cuisines, participated in amazing experiences, and stayed in superb accommodation, so our expectations are probably higher than many. Our accommodation preferences are boutique-style hotels.
